Recipe: Easy Peasy Vegan Brownies⁠⠀

Absolutely love these! I don’t have lots of time to bake so it is important that recipes are fuss free. The cacao powder is very rich and bitter, so you might want to use cocoa if you are not used to the taste.⁠⠀

The unsweetened apple sauce sounds a bit unusual but it is a great way to make the brownies chewier! You will need…⁠⠀

3 tsp ground flaxseed (I buy @linwoodshealthfoods from the supermarket, it is a great staple)⁠⠀
85g maple syrup (I love @thegroovyfoodcompany maple style agave nectar)⁠⠀
2 tbsp almond butter (I am trying @pipandnut at the moment – delicious!)⁠⠀
65g apple puree (try @bionaorganic it’s natural, no sweeteners)⁠⠀
1 tsp vanilla extract (*drools*)⁠⠀
65g whole wheat PASTRY flour (not whole wheat flour, this instead is more fine, perfect for brownies)⁠⠀
5 tbsp cocoa powder (I used 1 tbsp cacao, 4 tbsp cocoa, so I had the nutritional benefits of the cacao)⁠⠀
0.25 tsp baking powder⁠⠀
0.25 tsp baking soda⁠⠀
0.25 tsp sea salt⁠⠀

Preheat the oven to 180C and line a 20cm square baking tray with parchment paper. In one bowl, mix the flaxseed, agave nectar, almond butter, apple puree and the vanilla extract together. In a larger bowl mix the pastry flour, cocoa, baking powder, baking soda and salt. ⁠⠀

Then combine both mixtures and stir until it is combined, before spreading the brownie batter into the baking tray. Bake for around 30 minutes, cool on a wire rack before lifting out of the tray and cutting.⁠⠀
