Coconut Sugar Pink Lemonade Recipe

Coconut Sugar Pink Lemonade ?
A refreshing lemonade recipe with added nutrients and less sugar than traditional lemonade.

For a pitcher of six servings, use 1/2 cup of coconut sugar, 1 cup of water, 1 cup of lemon juice (use 5 lemons), 2 tsp pink pitaya powder and 4 cups of cold water.

Add the coconut sugar and cup of water to a saucepan and heat up. Keep stirring and remove from the heat once it has boiled. Add the sugar-y mixture to a pitcher, then add the lemon juice, pitaya powder and remaining cold water. Stirrrrrrrr! Pop in the fridge for a few hours to chill, and then serve over ice ???

Pink pitaya powder is freeze dried red dragonfruit! It is beautifully vibrant but there is nothing artificial, and it will supercharge your lemonade with nutrients. It is high in fibre, calcium, vitamin C, omega-3, omega-6, iron and magnesium. You can add to porridges, smoothies, yoghurts, ice cream energy balls, pancakes… it is a great way to get creative ?
