Strawberry Chia Jam Recipe

I batch make the jam on a Sunday if I have time and it lasts the week sealed in the fridge (just about?) It only takes about 15 minutes and you can use different fruit each time. So far I’ve used cherries, raspberries and strawberries… I want to try peaches or kiwi fruit next! Just bear in mind that the fruit you use will affect the sweetness and texture. You can add little pinches of things like lemon zest, cinnamon or vanilla extract if you want to experiment with flavours.⁠

To make about 2 cups worth, you need 4 cups of frozen fruit, 4 tablespoons of chia seeds, 2 tablespoons of freshly squeezed lemon juice and 2 tablespoons of maple syrup or agave (if you want to add some sweetness… maybe try it without first. I used maple syrup and Ted went a bit hyper after ? so tried it without this time and he still loved it).⁠

You simply heat the frozen fruit in a saucepan until it is bubbling, then mash the fruit with a spoon (the more you mash, the smoother your jam will be). Stir in the chia seeds, lemon juice and maple syrup until everything is combined and then remove from the heat. Let it cool for 5-10 minutes and the jam will thicken. Stir again and serve or store ?⁠
