Peanut butter & chocolate no bake energy bars

These delicious healthy treats are quick and easy to prepare and just need a few hours to set in the fridge – no cooking required. I made them one evening and left them to set overnight in the fridge. They are gluten free, dairy free and refined sugar free… chewy, filling and they taste really indulgent too so a really great sweet treat. They will last 4-5 days in the fridge or up to 3 months in the freezer!⁠⠀

For the bar you will need…⁠⠀
* 3 cups oats⁠⠀
* 1.5 cups smooth peanut butter (I use @pipandnut)⁠⠀
* 1/2 cup maple syrup or agave⁠⠀
* 1/3 cup melted coconut oil⁠⠀
* 1 tsp vanilla extract⁠⠀
* 1/2 tsp salt⁠⠀

For the chocolate layer you will need…⁠⠀
* 1 cup vegan chocolate drops (I used @moo_free_chocolates)⁠⠀
* 2 tbsp melted coconut oil⁠⠀

Blend your oats in a blender to make a flour like consistency. Leave some oats whole if you want a chunkier bar. Mix this oat flour with all the bar ingredients above until they’re combined. Transfer the bar mixture to your tray lined with parchment paper or silicone mould. Pop this in the fridge. Then melt your coconut oil and chocolate drops in a pan, then let it cool. Take your peanut layer out of the fridge and drizzle the melted chocolate over your chilled oat layer. Then pop in the fridge for a few hours or overnight to let the bar set.⁠⠀

I used a tray about 20cm x 20cm but you can use a bigger tray which would make the bars thinner, or a smaller tray and they would be thicker! Then you can cut them to whatever size you like, large energy bars, or small bitesize squares. The choice is yours! However you prep your energy bars, you will definitely gobble a few more than you mean to… ?
